The ultimate guide to perfect summer recipes
Freddie's Pavlova Rezept
This one’s a lovely pavlova, perfect for impressing your guests or just treating yourself to something sweet. Goes especially well with flowers on the table.
Ingredients:
- 4 egg whites
- 280 g sugar
- A packet of vanilla sugar or some vanilla essence
- 1 tsp vinegar
- 1 tsp cornstarch
For the top:
- 2 cups of whipped cream, 200 g each
- Mixed berries
- If you like, you can also use some (edible!) flowers
How to:
- Preheat Oven & Separate Eggs – First, you’ll want to preheat your oven to a cosy 300°F. Separate the egg whites from the yolks, and let the whites sit until they reach room temperature. We won’t need the yolks, so you can save those for another recipe or discard them.
- Beat the Egg Whites – Put those room-temperature whites into a stand mixer bowl or a large bowl if you're using a hand mixer. Beat them until they form soft peaks. You’ll know they’re ready when they’re foamy and hold a peak that folds over when you lift the beaters.
- Add Ingredients – While continuing to beat the egg whites, add the sugar one tablespoon at a time. Once all the sugar is in, beat for another 3 minutes until the mixture is thick and glossy. Then, add the vanilla, lemon juice, and cornstarch. Beat for just 5-10 seconds more or fold in with a spatula.
- Form – Trace an 8-inch circle on a sheet of parchment paper and place it on a baking sheet. Spoon the whipped egg whites into the middle of the circle and gently spread it to the edges, leaving a slight depression in the centre.
- Bake – Pop the baking sheet into the oven and bake for about an hour. Once done, let it cool.
- Finish & Serve – Finally, top your pavlova with a generous dollop of whipped cream, and arrange those lovely berries on top.
The Ultimate Summer Sundowner - Peach Fizz
Picture this: a warm summer evening with the sky awash in shades of pink and orange as your flowers sway gently in the breeze and the sun begins its descent. Now, imagine the perfect drink in your hand to complement this serene moment—the Peach Fizz. This isn't just any cocktail; it's the ultimate summer sundowner. Bursting with the sweet, luscious flavour of ripe peaches, a refreshing splash of sparkling soda, and a hint of zesty citrus, the Peach Fizz captures the essence of summer in every sip.
Ingredients:
- 8 OZ / 225 G Peach
- 6 TSP almond syrup
- 4 TBSP lemon juice
- 4 TBSP orange juice
- 8 OZ / 225 G sparkling water
- 1 PIECE peach slice, for decoration
How to:
- Add apricot juice, orange juice, lemon juice, and almond syrup to mixing bowl and mix for 15 seconds / speed 8.
- Fill a tall glass with ice cubes. Pour the juice mixture into the glass, then fill with seltzer or sparkling water.
- Garnish with the orange slice. Enjoy your drink!
